Sara, Tim, and Andrew, born in Costa Rica but living in Grand Rapids since 1998, love all foods American, but their favorite meal is still Gallo Pinto.

Gallo Pinto (Costa Rican Rice and Beans)
Beans:
Combine all ingredients and simmer 5-10 min.
Rice:
Stir vegetables in with rice. Serve rice topped with beans and garnished with shredded cheese, sour cream, fresh chopped tomato, salsa, and/or fresh cilantro.
