Gallo Pinto (Costa Rican rice and beans)

Sara, Tim, and Andrew, born in Costa Rica but living in Grand Rapids since 1998, love all foods American, but their favorite meal is still Gallo Pinto.

Gallo Pinto (Costa Rican Rice and Beans)

Beans:

  • 1 can of black beans
  • 1 t cumin
  • 1/2 t oregano
  • 2 T bacon grease (Costa Rican way) or 1/2 t dry mustard, 1 T red wine vinegar for a vegetarian option
  • Combine all ingredients and simmer 5-10 min.

    Rice:

  • cooked rice
  • sauted onion
  • sauted red, green, and yellow peppers
  • sauted celery
  • Stir vegetables in with rice. Serve rice topped with beans and garnished with shredded cheese, sour cream, fresh chopped tomato, salsa, and/or fresh cilantro.
